I have had this cookbook for about a month. I've made several of the recipes and enjoyed them. They use regular ingredients that you can find at the local store...unlike some vegetarian books I have looked at. The pictures are good, instructions clear.

At first, I was kind of skeptical about purchasing this book because other vegetarian books I have purchased in the past were difficult to make & awful tasting. But I went ahead and bought the book anyway and made the Lasagna Primavera & the Easy Italian Skillet Supper to start. WOW, Absolutely delicious! Of course, I did add some more herbs/spices to fit our taste. Since my husband is not a vegetarian I had to add shredded chicken to the Lasagna. He really loved it, along with the Italian Skillet dish. Many of the dishes in the book have pictures to go along with the recipe so that you'll know what the dish is supposed to look like. And for someone who is not a really good cook, I found the instructions to be very easy to understand. There many 6 different categories: 1. Soups, Stews, Chilies 2. Sandwiches & Pizzas 3. Salads 4. Skillet Meals 5. One-Dish Oven Meals 6. Side Dishes & Breads Just remember that all recipes are dynamic. You can adjust the recipe to fit your taste buds.

The recipes in this book all turn out very well and the instructions and preperation directions are great. The only downside is that many of the recepies are somewhat bland and need some more spice to them. This is a good book to have on the shelf for a few quick and easy recipes.
