Roasted Citrus Asparagus
1 bunch asparagus, woody bottom third cut off
1 teaspoon (2 g) grated orange zest
1 teaspoon (2 g) grated lime zest
1 teaspoon (2 g) lime juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 teaspoons (10 ml) extra-virgin olive oil
Preheat oven to 450º F (230º C, or gas mark 8) and line a large sheet pan with parchment paper or a silicone baking mat. Arrange asparagus in a single layer on the pan. In a small bowl, whisk together orange and lime zests, lime juice, salt, and pepper and then drizzle in the oil while whisking. Pour evenly over the asparagus. Toss the asparagus gently with your hands to coat completely. Bake 14 minutes until fork-tender.

My husband and I have been trying to loose weight but at the same time our children need to eat nutritious healthy meals that will help them grow. This book has been so helpful for us. I feel like we finally understand how to eat healthy without sacrificing flavor. The kids have been really enjoying all the new recipes as well. This is definitely our new go to cookbook for quick weeknight meals.
These recipes are a great help for anybody who wants to eat healthy, delicious meals. Try the slow cooker beef & vegetables tacos, they are hit with kids!
Amazing book for easy ways to eat clean! As a student I find it so hard to eat clean because most recipes I find have a slot of expensive ingredients and take to much time. Not this book it has helped me so much to stay clean and still be a student!!
I cannot view the book in any format. I do not have an actual NOOK, but have been able to read multiple nook books on my tablet, computer and cell phone and this certain book is a pdf and will not load. Beware of online format witht his particular nook book.
Clean Eating for Busy Families is an excellent guide that can help you take the breathless hassle out of meal times. Michelle Dudash has some well thought-out time savers as well as ideas to add variety to meals that have become rote. The recipes are fresh and the ingredients easily obtainable. I will buy this cookbook for my children. Cooking is one of my least favorite things to do, but I love this cookbook!! It is helping my family eat healthier recipes more often and as a very inexperienced cook I am able to successfully cook many of these recipes. My 3 year old son often exclaims "this is delicious!!" as he cleans his plate. Some of my favorites recipes so far are the Spinach Parmesan Stuffed Salmon, Toasted Sesame Salmon Nuggets, Skinny Chicken Parmesan with Spinach and for the summer on the grill two of my go to recipes are On-the-Go Tangy Chicken, Bell Pepper & Red Potato Packets and Jamaican Jerk Chicken & Sweet Potato Planks. As a single mom it is extremely important that these are quick to prepare and I would highly recommend this book to anyone!
This is one of the best cookbooks I've ever used. Everything I've cooked from it has turned out PERFECTLY, which is a credit to Dudash's clear instructions, and everything has been gorgeous and flavorful to boot. Some family favorites include the Pad Thai (which is just as good as the Pad Thai from my favorite restaurant), the lentil salad, the buffalo chicken dip, and the peanut brittle bars. In addition, the cooking tips sprinkled throughout are things that I've been able to apply to my cooking elsewhere. I've noticed that some reviewers have complained that recipes tend to take longer than she suggests. For me, this is true of every cookbook I own, so I can't really fault this particular book on that account - I chalk it up to my own inexperience! Some reviewers have also complained that the recipes sometimes include ingredients that don't qualify as "clean." For me, this book strikes the perfect balance of being as "clean" as possible while also being user-friendly to those of us who don't want to spend the extra time making our own chips, pasta, etc. In other words, if you want a cookbook that will help you prepare more wholesome meals for your family without requiring that everything be made from scratch (and you like delicious, flavorful food), this book is a good bet!
