If you are diabetic, you might want to use only low-fat yogurt or milk, with stevia as your sweetener. For a keto diet, use regular, full-fat yogurt, milk, half and half, cream, whatever suits your diet best. I've found they all work well in my little electric ice-cream machine.
My husband is a diabetic, so we stay away from sugar and fat as much as we can. Most of these recipes suit us just fine, and they taste good. Best of all, they're mostly easy and guilt-free. I've also added some old recipes that contain eggs, just in case you like to make old-fashioned frozen custard. They're not as quick or as easy, but you can still make them low-carb. And they are delicious!
