I must admit that I might have to buy two of this same book -- one to keep in the kitchen and one to lay out on my coffee table. The book itself and the photography inside are that beautiful. (As a lifetime dieter, why wouldn’t I think of this as the perfect picture book, right?) This book is so much more than pretty though. It’s literally chock full of inventive ways to have our cake and eat it, too. One of the great aspects of the author’s presentation is her conversational style (did she write this book just for me? it seems like it) and the realistic recipes. In other words, these “swaps” (as the author calls them) use real foods as ingredients. Ones that you likely have around the house -- or can source easily. No running to special food stores or searching the town for that random ingredient. I’ve always loved watching the author on The Today Show and now, thanks to this book, she’s on hand in my kitchen (and perhaps on my coffee table) to deliver tasty recipes that don’t come with any of the food hangovers that their junk food counterparts do. Highly recommended (and would make a great gift I might add).

I’m not normally a fan of diet-type cookbooks, but I got this as a gift and love it. The recipes are all stuff you really want to eat and (more important) what your family wants to eat. You can even serve these recipes to friends and make a great impression (they don’t have to know they’re getting half or less of the calories — ha!). Definitely recommend this.

I thought I'd mix things up and review a cookbook today. I've been trying to eat healthier and it seems that all of the delicious stuff is unhealthy. So when I saw the premise of this book I knew I had to request it. From Junk Food to Joy Food is exactly how it sounds, we take the junk food that is high in calories we all know and love and find ways to reduce that calorie count while staying delicious! I'll admit I was a bit skeptical at first and so was my boyfriend but we tried a few recipes and they actually tasted quite good! I had to make a few substitutions or my boyfriend wouldn't eat the dishes but we still chose the low-calorie options where we could. The Fettuccine Alfredo recipe doesn't call for chicken but I know how much my boyfriend enjoys it with the dish so we added that. He also doesn't care for the taste of whole wheat pasta, so I did the normal kind. On the sauce, which is normally the heavy calorie hitter we stuck with the cookbook recipe. While it did taste a tiny bit off due to the low/reduced fat products used in the sauce it was still quite tasty! BF gave this recipe a 3/5, I'd say 4/5. I'm a huge Mexican food lover so of course I had to make a low-calorie version of Chicken Enchiladas. These were super easy to prepare and the chicken filling is actually how I do chicken tacos so that was easy! I already know we will be remaking these again in the near future. Boyfriend gave this recipe a 5/5, and I'd have to agree it was amazing so a 5/5 from me too. All in all this book was a huge hit at my house. I'll be trying out more of the recipes in the future and will probably post food pictures on Instagram. If you want to be updated follow me: @lilyelement.
