Lindsay begins this book by making her intentions very clear: to show people a vegan diet can be easy, tasty, and for everyone. I assume people always read the beginning of their cookbooks, as these tend to have valuable information. If you read this information, you should know perfectly well what you're getting into with this cookbook. EASE OF USE In the intro and appendix, Lindsay provides great tips on stocking your kitchen, removes the mystery surrounding some terms longtime vegans tend to take for granted, and helps the newbie get started. Lindsay also provides various tips for someone not only new to vegan cooking, but cooking IN GENERAL. In addition, she provides a very clear legend to use when choosing a recipe - my favorites being Quick, Kid-Friendly, and Omni-Friendly. This legend, as well, should give you a hint as to what she's going for with this book. RECIPES This is an excellent cookbook for someone new to veganism, and even cooking as a whole. The recipes are VERY easy. No complicated ingredients or uncommon tools. As she explains, she's trying to remove unnecessary fats, oils, sugars, and processed grains. You will find some vegan meat subs and canned items; but this is hardly the greatest sin in vegan cooking. If you have the time and prefer fresh ingredients, by ALL means, use them! Personally, I prefer dried beans; but eliminating all canned and convenience items could be daunting to a new vegan. I feel Lindsay was wise to set things up the way she did. LAYOUT/PHOTOS Beautiful! I think Lindsay has done a fantastic job showing new vegans that food can still be beautiful and appealing, even to non-vegans. The book, recipe pages, and photos are colorful and fun. I get the impression they match Lindsay's personality nicely. SUMMARY Lindsay's provided a lovely book here for both new vegans and experienced vegans looking for quick, no-fuss, omni-friendly recipes. Her comments are light, fun, and useful. There are VERY few recipes in this book I don't see myself making. Immediately after purchasing my own copy, I went back and purchased another copy for a dear friend trying to make her way to a vegan lifestyle. She's already made nearly half a dozen recipes and loves it. If you are struggling with some of the delicious but complicated recipes in many vegan cookbooks, if you know someone trying to make the switch, or if you know someone just trying to work more meat-free recipes into their diet - this book is an EXCELLENT investment.

This cookbook is for everyone who wants quick, healthy, but mostly YUMMY food. The cookbook itself is beautiful with lots of color photos and great icons to show what is quick, fat-free, gluten-free, soy-free, kid-friendly, omni-friendly, or requires very little cooking. My favorite recipes are the Nutty Spread, Nacho CHeese Sauce, Mexican Dip, Low-Fat Guacamole, Chocolate-Zucchini Muffins, Creamy Carrot Soup, Yemisir W'et, and "Tuna" Salad. This will be by far one of the most used cookbooks in your collection.

This is a vegan cookbook, but it is a cookbook for everyone. Don't let the V-word scare you - this is just good, simple, healthy, and yummy food! I love her pictures throughout the book (I'm such a visual person!) and every recipe I have tried so far has been amazing! Her recipes are easy to follow, and delicious. My favorite recipes out of here so far have actually been baking recipes! A moment of truth here: I am absolutely not a baker; it's too complicated and time-consuming for me. The fact that I have baked more than one thing from this cookbook just shows how EASY it is! First, I made the banana bread, which was outstanding and another fabulous use of brown bananas. Two weeks ago, I needed to make something festive for my daughter's birthday. I settled on the strawberry cupcakes with Lindsay's homemade icing recipe...and they were pure heaven!!!! I made mini versions using a mini-muffin pan. They were soooo cute! Vegan baking is surprisingly easier than regular baking (because the recipes are simpler), and much easier to do on a whim (you don't have to worry about having eggs in the fridge!), plus it is always safe to eat the batter! I repeat: safe to eat cake batter. I also made her instant cookie dough the other night...again, cookie dough that is fast to make and safe to eat (amazing!) and I definitely have a new favorite way to indulge in cookie dough! Here's the best part about the Happy Herbivore cookbook: Lindsay makes vegan food accessible to everyone. I am not a vegan, but I eat very little meat, and only some dairy (mostly yogurt, and a little cheese). I have never missed eggs, dairy, or meat in any of her recipes - and I don't think you will, either!

The Happy Herbivore cookbook makes it easy for anyone to try vegan cooking. Nearly all recipes are easily adaptable to any dietary needs as well. ((and all recipes are identified that are already gluten free, soy free, etc)) Not only are the recipes delicious, and low fat but they are easy. The recipes don't have pages of foreign ingredients and steps you have to google just to understand what they mean. If you are a vegan veteran, or simply vegan curious this is one book you MUST add to your collection. This is an excellent book for starter vegans. I myself am a vegetarian just trying out a more vegan lifestyle and Happy Herbivore has help it seem a more realistic goal. The cookbook is full of delicious pictures with nearly every recipe. All recipes are very easy to follow, with recipes most people would already have on hand in their pantry. Any item that may be new to you is covered in the glossary of the book, where is also explains what the item does in a recipe. The introduction alone is enough reason to buy this book, it is full of information that any chef or home cook can put into use. Also the author is a REAL person. She does this because she has a passion for it, which comes across in the recipes. I am very thankful to have discovered Happy Herbivore, it truly changed my life. So pick up the book for yourself and start getting healthier in the most delicious way!

Meeting Lindsay on Twitter shortly after deciding to go Vegan was one of the best things that ever happened to me. I was really excited when Lindsay chose me to be one of her testers for this cookbook. Newly vegan I wasn't sure where to start. Lindsay introduced me to new foods with her creative, easy, few ingredient recipes. I thought Chickpeas were something you sprinkled on salads at the salad bar but Lindsay has some really tasty recipes with them. I used to make Tofu Scramble with tofu, oil and a box mix. No oil, some tofu and a few spices add up to the best Tofu Scramble I've ever had. Make French Toast without eggs? Lindsay does and it is better than the real thing. Home fries without the fat? Lindsay has it! The BBQ Chop Wrap is one of my favorite all time recipes. I make the single serving brownie almost every week! And don't get me started on her Pumpkin Pie... Recently I discovered that I can't tolerate Gluten and also had to cut back on Soy - Lindsay's book has many recipes that I enjoy. Giving up all the fat for flavorful food cleared up my skin and helped me lose weight while feeling good. I highly recommend Lindsay's book for everyone who enjoys food.

Lindsay's cookbook should be in everyone's cookbook library - whether you are vegan - vegetarian or omnivore (like me)! The recipes are easy, affordable and she makes you feel more confident in the kitchen. I highly recommend this cookbook and can't wait for her next one!!!

as a lifelong vegetarian and 8 year vegan, i have tried A LOT of cookbooks, and all i can say is if this one had been out back then, it could have saved me a lot of money and time! since my friend bought me HH for my birthday, i havent touched another book again. even my non-veg friends and family have had to admit that they wouldnt believe the dishes ive prepared for them from this book were vegan if they didnt see me eating it! the best part is, unlike most veg cookbooks, these recipes dont call for weird, hard-to-find ingredients that you might not even be able to get everywhere, that are expensive and you need a tiny amount and never use it again. that was always the main reason other books got left on the shelf. lindsays recipes call for things you can find in the regular grocery store, that dont cost much, and that you will actually use frequently. if you are unsure of a book to try, or are a new veggie, or need to find something for omni friends/ family to eat that you want to be sure they will like, THIS is the one, no contest. i had the new cookbook on pre order the day it went on sale, and cant wait for it to get here!!

This is one of my favorite cookbooks. The recipes are easy to modify since I have a gluten intolerance. Also most of the recipes are gluten free to begin with. You have to try the black bean brownies. They are to die for.

The recipes in this book are easy to follow and delicious. I absolutely love that the index includes the ingredients, now I know what else I can make with half a can of canned pumpkin. The ingredients are easy to find, and the recipes have symbols to help you find the ones that are fat-free or kid friendly. This cookbook will be regular go-to for me

I read the book Eat to Live and was struggling to find good tasting foods that my family would eat. This cookbook is wonderful for a person who is doing their best to eat a plant based, low-fat diet. I recommend it for all of you who are like me and don't even have a clue where to start. I have cooked a lot of the recipes multiple times and feel like this is my "go to" cookbook.

I have followed the Happy Herbivore online for a while and was excited to pick up her book when it came out. I loved the Red Lentil Dhal and the Not-Tuna Salad. The black bean brownies are great, too!

I bought this book a week ago and have enjoyed everything I've made from it. Even my 15 year old non-vegan daughter has enjoyed the fare. Everything is very simply outlined and everything that I've made so far has come from my pantry. I haven't had to go shopping once to satisfy the recipes. Great job Lindsay!

I got great reviews of this book from friends, and was inspired by the fact that many recipes do not contain meat substitutes. I purchased the Nook version of the book, and while it is beautiful and the recipes are great, I do have a pretty major complaint. The left side of each page is cut off, so the measurement for each ingredient is not visible! Incredibly annoying!!!

I love this book! I grew up in a meat and potato family? I have Type 2 diabetes and am desperatly trying to find veg recipes that taste good. Most books have such far out recipes and unusual spices that I don't even know where to purchase them. This book I CAN FOLOW THE RECIPES? Thank you soooooo much!!!!!!!

I decided to try the vegetarian/vegan lifestyle and found it quiete challenging at times due to complex recipes. I saw the HH cookbook and immediately called my B&N to reserve it and went on my lunch break to buy it. Some of my FAVES are the mock tuna salad, red lentil dahl, chick pea tacos!! The black bean brownies are YUM. The chick pea patties are tasty! Everything is so easy to make and did I mention the SINGLE SERVING desserts????? Why does every book not have this option! Its so simple and easy to make 2-3 snacks rather than a pan of 12 muffins etc. Oh and the raw ice cream is a staple for us too!!!! Most items I have on hand or can go purchase easily. This is by far the best vegan cookbook I have seen and used, I can not wait for the 2nd one!!!

Kudos and thank you to Lindsay for making eating well simple, accessible, and appealing to the masses. I've been following her blog for some time and could not wait for her first cookbook to be released. She certainly did not disappoint. It's wonderful! Never before have I wanted to try every recipe in any one publication. So far, we've tried "tuna" salad (delish), and for a potluck at my husband's office, I made a huge batch of baked beans and cornbread - huge hit! Little did anyone know that they were enjoying a healthy, fat free version of a crowd favorite. And check out her substitute for butter in her scones recipe - genius! That's next on our list to try. This cookbook is bound to be the most used in my library. Vegans and non are sure to enjoy.

If your trying to cut back on your fat & meat consumption, this cookbook will REALLY help you. Your meals will be delicious and the recipes are VERY easy to follow. The pictures in the cookbook are beautiful and you will be making a list of all the recipes you want to try. I like this cookbook, because most of the ingredients I already have in my pantry, so there is no need to make a long grocery list before I try a recipe.

I have been waiting for this book to be released and it was worth the wait. Fun, easy and tasty recipes. This book is good for Vegans, for people transitioning and for people that want some meat and dairy free meal options. The Author is one of the most approachable and helpful people out there!

I'm a fan of Happy Herbivore's online recipes so knew I had to get this cookbook. It doesn't disappoint! I love it even more than I thought I would. For starters, it's a beautiful cookbook. Tons of full page color pictures, which for the price of this book, is rare. I like the selection of recipes, from brunch to dinner to dessert. Love that it doesn't include a giant section of salads and salad dressings as so many other vegan cookbooks do. Previously when I thought of low-fat food, I thought of bland, boring, dry food. Lindsay has changed my mind completely about that! Her cupcakes are moist and delicious, all with very little fat and low calorie! I also love her chocolate chip cookies and butter bean cookies (butter bean recipe is on her website). I've had the cookbook a few days and have made the following recipes: tofu scramble, cajun home fries, gingerbread mini loaves, cornbread, tuna salad, blue corn chickpea tacos, chickpeas and dumplings, baked ziti, spaghetti and meatless balls, oatmeal cookies, chocolate cupcakes, and chocolate chip cookies. Luckily many of the recipes don't make a ton of food, so I could sample a lot of different recipes. Every single recipe has been good and will make all of them again! Another great thing about this cookbook is the recipes use simple to find ingredients and come together in a snap. I can honestly see myself cooking from this book at least once every single day, the recipes are so quick and delicious. I can only say that about one other cookbook I own, but it isn't low-fat. What a great gift this cookbook will be for friends and family looking to lose weight, eat healthy, and/or sample great vegan food!

Vegan or not. Food snob or not. I personally think everyone should buy this book just to make great tasting healthy meals. I first followed the author on twitter after finding her website. Of course I became obsessed with the recipes. Everyone I tried worked out great. I love how she makes things sinple but full of flavor. The previous bad reviewer must not be a happy (chuckles) person because each recipe is fun and tastes great. It may be simple but you get great results. Just because she gives you time saving items (pre-made meat alternatives) does not take away from the food. It just gives you more time to enjoy what you cook! Try the pumpkin bread, doughnuts or anything else. Everything tastes and looks great!

I really like this cookbook-most of the recipes are pretty easy to make, and they are all familiar, comfort foods instead of crazy exotic dishes that take two hours to prepare!
