Overnight Success Soufflé
Typically, when most people flip through a cookbook, they pass right by the soufflés because they think they're complicated and they will have to be so careful when making them. Not this one! You can make it up the night before your brunch, then bake it in the morning before your company arrives. They'll think you fussed all night!
16 slices (1/2-inch-thick) challah (egg bread) or white bread
3 cups (12 ounces) shredded Swiss cheese, divided
2 1/2 cups milk
1 teaspoon dry mustard
2 teaspoons onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
Place 8 slices of bread on the bottom of a 9" x 13" glass baking dish that has been coated with nonstick vegetable spray. Sprinkle the bread with 1 1/2 cups of the cheese. Place the remaining bread slices over the cheese, then sprinkle the rest of the cheese on top. In a medium-sized bowl, whisk together the remaining ingredients. Pour over the bread and cheese, cover, and refrigerate for 2 hours or overnight. Preheat the oven to 350 degrees F. and bake for 50 to 55 minutes or until puffy and golden and the center is set. Serve immediately.
8 to 12 servings
Note: Cut or scoop into serving-sized portions.
B.L.T. Salad? Sound crazy? I thought so, too, but I tried making it anyway...and am I glad! Yup, it tastes just like a B.L.T. sandwich on toast. It's the answer for a quick, light lunch get-together.
1 medium-sized head oficeberg or romaine lettuce, shredded (about 8 cups)
2 large tomatoes, chopped (about 2 cups)
1 pound bacon, cooked until crisp, crumbled
2 cups seasoned croutons
3/4 cup mayonnaise
1/4 cup milk
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
Place the lettuce on the bottom of a large salad bowl. Layer over that the tomatoes, crumbled bacon, and croutons. In a blender on medium-high speed, blend the mayonnaise, milk, garlic powder, salt, and pepper. Just before serving, pour the dressing over the salad but don't toss it! (That'll ruin its super look.)
