chocolate raspberry truffle

This ice cream reminds me of France, where foods and treats are part of the national consciousness. The French expect exciting tastes every day. This is one of them!

homemade version

1 recipe Rich Chocolate ice cream (page 24)
10 ounces seedless red raspberry jam

Following the directions for Rich Chocolate ice cream, add the raspberry jam 5 minutes after you've added the egg yolks. Stir with a wire whip so the jam melts and is thoroughly incorporated; let steep about 5 minutes more. Follow the rest of the instructions to finish. Like any good jazz musician, you can go on all night doing these variations. Think of other liquors you like. Think of other jams that would complement or enhance chocolate. I think you get the idea! Makes 8 servings.

easy mix-in version

Replace the Rich Chocolate ice cream with 1 quart premium store-bought chocolate ice cream. Soften the ice cream and place in a medium-size mixing bowl. In the meantime, heat the jam in a small saucepan over medium heat or in the microwave. Stir the jam into the softened ice cream. Return ice cream to container and put in freezer to cure and harden.
