About the Author

Rita Romano, a native of Italy, chef credits her friend Clarissa Burt as being the inspiration for Italian Gluten Free Gastronomy: The Art of Selecting, Preparing, and Savoring Gluten Free Meals.

Clarissa’s long career in modeling included many years of residence in Italy. During a conversation the two had in 2015 when Clarissa was in Phoenix, Rita learned that although Clarissa loves Italian food she has gluten sensitivity. Rita knew she could come up with Italian recipes Clarissa would like and enjoy—without gluten.
