Picked this book up from the local Barnes & Noble expecting to make delicious, easy dishes; however, most of the dishes were quite ordinary. The book is good at laying down the foundations for creating these traditional food items, but do not expect it to be flavorful - but just bland. Most of the recipes leave out an important ingredient to put that extra depth into the flavors. If you have an additional authentic Japanese cooking book, this would be an acceptable "outline view" of procedures. Overall, will not help in cooking satisfying Japanese food.
