Overview

The Kentucky Fresh Cookbook by Maggie Green, Cricket Press

A seasonal food journey with native Kentuckian Maggie Green, The Kentucky Fresh Cookbook takes home chefs through a year in a Kentucky kitchen with more than 200 recipes. With a focus on the cook's activities in the kitchen, this book guides both aspiring and experienced cooks in the preparation of delicious meals using the delightful variety of foods found in Kentucky.

Green welcomes readers with her modern and accessible approach, incorporating seasonally available Kentucky produce in her recipes but also substituting frozen or canned food when necessary. She complements her year of recipes with tidbits about her own experiences with food, including regional food traditions she learned growing up in Lexington, attending the University of Kentucky, and raising a family in Northern Kentucky. The Kentucky Fresh Cookbook acknowledges the importance of Kentucky's culinary and agricultural traditions while showing how southern culture shapes food choices and cooking methods.

Green appeals to modern tastes using up-to-date, easy to follow recipes and cooking techniques, and she addresses the concerns of contemporary cooks with regard to saving time, promoting good health, and protecting the environment. The Kentucky Fresh Cookbook contains a year's worth of recipes and menus for everyday meals, holiday events, and special family occasions — all written with Kentucky flair.

Chef & fellow Registered Dietitian Maggie Green put her whole heart and soul in this cookbook. Her love for her home state of Kentucky as well as her love for cooking & sharing meals with her large family shines through in this book. Maggie stresses the importance of buying local and buying seasonal. The month-by-month format of delicious recipes allows you to plan your meals according to what is fresh and in season for that particular month. We really like the calendar of menus that she has organized according to the occasion (such as the "St. Patrick's Day" menu and the "Kentucky Derby Bash"). We are both Registered Dietitians and, although we reside in NC, we will treasure this cookbook! We have really enjoyed using our home-grown parsley for the "Lentil Soup with Red Wine and Parsley" recipe. The kids enjoy it too! Maggie says, "Never has there been a greater call to unleash the potential of our kitchens and make them places of action, places where families cook, eat and live together, one meal at a time". We could not agree more. When meals are cooked at home and shared together, we eat healthier and we strengthen our family bonds. Preparing and eating more meals at home is part of the solution to our country's growing obesity and diabetes epidemic. My mouth began to water as soon as I picked up the Kentucky Fresh Cookbook and didn't stop till I chowed down on one of Maggie Green's recipes. With a focus on seasonal foods and month to month recipes I feel prepared to entertain a large party or make meals for two that are full of flavor and carry the essence of the season. This is a great addition to my collection of recipes as meals are simple to prepare and taste so delicious! Also, all the cooking tips along the way were greatly appreciated. I live in NY but longed to be sitting at Maggie's kitchen table. Now I've got the next best thing...the Kentucky Fresh Cookbook!
