Meet the Author

Rick and Michael Mast are the co-founders, owners and master chocolate makers of Mast Brothers Chocolate, the first in generations to bring "bean to bar" chocolate making to New York City. They were born and raised in Iowa.

I would recommend this book because of the brothers' compelling personal story and because of the beautiful, artistic photographs. I have  tried only one recipe so far, but I suspect that the recipes are not the strongest element of this book. The cupcakes, for example, are overly crumbly (not overbaked--they are too tender and just don't hold together); the recipe makes 16 or 18, not 12, so the cups were  overfilled and had mushroom tops (unlike the photo); the mixing order is odd; the baking time is way too short (for 12 cupcakes, it required 20-22 minutes, not 15), etc. The other recipes look a little nonstandard to me as well. In short, buy this as a coffee table book, but not as an everyday chocolate cookbook.
