A Recipe from Moosewood Restaurant Low-Fat Favorites

Orzo and Green Herbs
Serves 4
Total preparation time: 15 minutes

This is a handsome, quickly prepared dish, and when the hot pasta warms the fresh herbs and extra-virgin olive oil, a lovely fragrance is released.  Orzo and Green Herbs can accompany steamed or roasted vegetables, main-dish salads, or simple grilled or broiled fish.  

6 or 8 cups water
1 cup orzo (about 7 ounces)
1 cup finely chopped mixed fresh herbs (thyme, chives, garlic, chives, basil, sage, oregano, parsley, marjoram, chervil, tarragon)
2 teaspoons extra-virgin olive oil
1/2 teaspoon salt freshly ground
black pepper to taste

Bring the water to a rolling boil in a large, covered pot.  Stir in the orzo and cook for about 7 minutes, until al dente.

Place the herbs, oil, salt, and pepper in a serving bowl.  When the pasta is ready, drain it and add it to the bowl.  Toss well and serve immediately.

I have an extensive cookbook collection, but this is by far my favorite cookbook! The recipes are flavorful, healthy, and creative. Each recipe includes an estimated cooking time and a list of suggested other dishes to accompany it. All this makes planning meals, especially new ones, easy. I'd recommend this to anyone who enjoys vegetarian cooking or eating.

Vegetarian or not, this cook book rocks. Anytime I'm trying to decide what I want to cook, this is the cookbook I grab. Some of the recipes have extensive ingredient lists and look complicated but I have yet to find one that was actually difficult. My meat-lover husband loves these recipes. Black bean & Sweet Potato burritos are awesome. Sometimes the portion/serving sizes seem a bit big...recipes say they serve 8 but we get 10 to 12 meals out of them (and sometimes more). This is the fourth one I've purchased--I love it so much, I also give it as gifts.

This is a low-fat cookbook, so the flavors are more subtle. I found the recipes to be easy to follow, taste very good and offer a variety of flavors from around the world. I recommend this book to anyone who likes dips, salads and other picnic or backyard style meals.

I have been using this cookbook for years and almost everything I try out of it is fantastic. Healthy food, not too many fancy ingredients and well tested recipes. I also love that they suggest what else to serve with each dish - makes meal planning easy.

I've had this book for years, and it never fails--when cooking for friends, the non-veg people always beg for recipes and everyone leaves satisfied and happy. I took this book to a camp cooking situation, and every day i'd have to make twice as much from these veg recipes as the regular food, because non-veg people would prefer it. Wonderful pasta, soups and sandwich recipes, great for lunches & leftovers.

In my first year of college, I came to a very important conclusion: I was fed up with crumby, boring food either served in the cafeteria or made on my hotplate. Thus I resolved to learn to cook. I discovered this book and immediately fell in love with it and cooking in general. It's that brilliant! The recipes are flavorful, healthy, diverse, and entertaining and I am actually capable of cooking them! This book is truly fantastic!

I've been using this cookbook for years now. It offers excellent variety and delicious taste and it's low fat! Even the desserts are great, the chocolate pudding is scrumptious. I wish Moosewood would write another low fat book!

Absolutely wonderful, everything is perfect. I've been vegetarian for years and most veggie cookbooks repeat the same recipes over and over, but Katzen is truly a veggie catalyst and knows how to encoporate spices and flavors into dishes that the family, meatless or not, can savor and enjoy. Have fun being healthier with this book, and also try her other titles, my favorite being The Enchanted Broccoli Forest.

I have yet to try a recipe in this that I don't like. Great healthy choices for everyone if you: 1) love to cook; 2) love a wide range of foods and 3)can enjoy a meal without meat, this is the book for you!

This is the worst cookbook I have ever purchased. I would return it if I could. I bought this book on recommendations from various sites and even tried the recipes the reviewers suggested, but all tasted horrible, a few being inedible. Our whole family could not eat a single dish. They tasted very bland with a few spices added to try to give taste. Also, the ingredient amounts listed and preparation times were erroneous. Even the basic vegetarian information can be found in much more depth in other cookbooks such as the Vegetarian Times Complete Cookbook. Please do yourself a favor and don't waste your money on this cookbook. If you are looking for excellent low-fat vegetarian fare try the Vegetarian Time series and 1001 Low-Fat Vegetarian Recipes by Sue Spitler.

Avoid Canola oil - (hot topic- but see "The 150 Healthiest Foods on Earth" to see why) That book also explains about "low-fat" We also recommend these: "The 150 Healthiest Foods on Earth" is very informative. Good information. We highly recommend "Rainbow Green"; "The Green Foods"; "The Raw Food Revolution Diet"; and "Raw 50" are very informative books. "Complete Idiot's Guide To Eating Raw" is a good book to start with for learning about raw food. It has good recipes and a simple layout. We also recommend "The Sprouting Book" by Ann Wigmore; "Ani's Raw" by Ani Phyo (but be careful with using all recipes with nuts - you'll gain weight); all Moosewood books (they are not all raw, but have good raw and not raw recipes) "Moosewood Restaurant Cooks At Home" (best simple starter); "Moosewood Restaurant Daily Special"; "Simple Suppers"; "Moosewood Restaurant Celebrates"; "Sundays At Moosewood Restaurant"; and "Moosewood Restaurant Low-Fat Favorites" (although I don't recommend "low-fat" - just use healthy fat - you can see the difference "The 150 Healthiest Foods on Earth" by Jonny Bowden)
