I read found this book interesting where i can make homemade nut butters with any kind of nuts and seeds. Great recipes to try and I can't wait to try them. Yum!
You never can go wrong with Robin Robertson, but this cookbook is exceptional. The recipes are not only delicious and easy, they accommodate a lot of dietary preferences. There are many gluten free and soy free recipes, and while they are all vegan, non-vegans won't notice that they are meat-, dairy- and egg-free. The nut butter gives the dishes a rich, creamy taste. The Curried Cashew Vegetable Soup and the Broccoli and Rice Noodles with Hoisin-Cashew Sauce dishes will warm your stomach and delight your taste buds. This cookbook covers it all, from soups and starters to desserts and snacks. It also has attractive photos. The Penne Primavera with Avacado Cashew Cream will become one of my staples for sure. Highest recommendations!
I'm a big fan of both nut butters and Robin Robertson's cookbooks, so it's as if this book was made just for me! Nut Butter Universe contains recipes for everything from soups and starters to main dishes and desserts. There are instructions for making your own nut and seed butters, nut creams, nut cheeses and even cashew sour cream and mayo. There's a nut butter primer that starts with the history of peanut butter and has info on buying and storing nuts, dealing with nut allergies and cooking with nut butters. The Plant-Based Dietitian Julieanna Hever wrote the book's forward, which if full of nutritional information about nuts and nut butters. All of the dishes use easy-to-find ingredients and have simple, easy-to-follow instructions. Gluten-free and soy-free recipes are clearly marked and many recipes have gluten and soy free options. When a new cookbook arrives, I usually sit down with it and a pad of sticky notes and mark the recipes I want to cook, but I haven't been able to do that with Nut Butter Universe because I want to make every dish! I've made several so far and my favorites have been the Szechuan Stir-Fry with Firey Peanut Sauce and Bryanna's Chocolate Double Nut Clusters. (Those nut clusters are highly addictive!) Quinoa and Black Beans with Cashew Queso Sauce is also an excellent dish, and I even caught my cat Archie trying to eat some of the amazing cashew queso! I'm looking forward to cooking (and eating) my way though the rest of the book!
