There is an excellent summary of this book on page 49, 4th paragraph. " All of the dietary changes required to improve nutrition may seem daunting or even insurmountable at first, and taken all at once they may be." This book is the output of a small section of US agribusiness advocating for nutrition by requiring students to wade into the chaos of the chemicals, profits, and insane changes to world agriculture with their charts. They lead the student to govt. institutions like FDA, CDC, USDA, and NHHS, who coordinate with the food and chemical corporations to fundamentally monetize every aspect of our food production, yet are the same entities that publish the charts and guidelines the authors require the student study. The student must answer questions about "The Dietary Reference Index", "Recommended Daily Allowance", "Adequate Intakes" charts, Acceptable Nutrient Distribution Ranges", "Estimated Average Requirements", "Tolerable Upper Intake Levels", etc..... These authors are trying to reform a system that is determined to industrialize, monopolize, and globalize the latest business model of food. Their effort is hopless at best. This book on nutrition doesn't talk about the destruction of the oceans, the poisoning and devaluing of our food and water. No mention of soil fertility, industrial farming, mergers and aquisitions, and the disappearance of diversity of crop selection that is our reality. No mention of the assault by advertising on women's body image. No naming of names for the corporations feeding us junk they allude to. It's not a book about nutrition as much as it is a complex, even chaotic, "how to" manual for the "required" change in personal diet within the war on our stomach's and our planet. A war the agencies they themselves are recommending us to, is busy waging.
