Quick and Easy Vegan Comfort Food: 65 Everyday Meal Ideas for Breakfast, Lunch and Dinner with Over 150 Great-Tasting, Down-Home Recipes by Alicia C. Simpson MS, RD, IBCLC, LD

A born food-lover, raised in California on “the best Mexican food in the country” and her father’s “traditional Southern soul food,” Alicia C. Simpson couldn’t imagine giving up her favorite dishes to become vegan. Animal-free food might be healthier, but could it match the tastes of home—like fried chicken, macaroni and cheese, or a bowl of chili? Three years after Alicia took the vegan plunge, Quick and Easy Vegan Comfort Food answers that question with a resounding “yes!”

Here is the essential cookbook for any of America’s more than 6 million vegans who miss the down-home tastes they remember (or want to try), or for vegetarians and even meat-eaters who want to add more plant-based foods to their diets, but don’t know where to start. Comfort-seeking cooks will find:

  • Easy-to-prepare, animal-free versions of classics like Spicy Buffalo Bites, Ultimate Nachos, Baked Ziti and more
  • 65 delicious combinations for breakfast, lunch, and dinner, with flavors from around the world, like “Chinese Take-In” or “Tijuana Torpedo”
  • Everything you need to know to start your vegan pantry, and why being vegan is easier, less expensive, and more delicious than you might think.

With spirit and style, Alicia shows just how easy—yes, and comforting—vegan food can be.

I just got this book last week, and tonight I made the Mac and Cheeze. It's listed as a side dish, but I made it my entree, and it's amazing! That recipe alone is worth the cost of the book. There's not fake cheese in it, it's hearty and filling, and it's cruelty-free! Great book. I'm going to try some of her desserts next. I am an experienced vegan cook and baker, so I had low expectations for a book to impress me, but this one really did! Bravo!

I have been cooking from this cookbook all month, and it is amazing. Every recipe so far has been delicious. Plus my very non vegan husband didn't even know he was eating all vegan. I would recommend this book to people who are vegan and miss some yummy cheese recipes from before they were vegan. Also to people thinking about going vegan, or new vegans. The recipes were easy to follow and the ingredients easy to find and affordable. We are not vegan by choice we have food allergies so it was nice to find a cookbook that allows us to have foods we miss eating. My favorite recipe so far is the veggie lasagna.

This book is better than a new puppy for christmas. Well, close anyways. I cannot wait to send an email to Alicia Simpson and thank her for this amazing book. Since changing over to a vegan diet, I have been pleasantly surprised at how diverse my diet can still be without dairy and eggs. I have to admit that I was very sad to say goodbye to mac & cheese for the rest of my life. Thankfully, the recipe in this book for macaroni & 'cheese' has furthered my feeling that I have really given up nothing in this diet change. Warm, filling and cheesy, I cannot praise the recipe enough. In addition, I would like to mention some amazing soup recipes including the cold-weather, belly-satisfying 'winter bean' and the recipe I have been waiting for my whole life, the south-western inspired 'black bean soup'. This book is full of wonderful surprises, recipe names that sound nice, but in reality are so much more than that. They are new permanent fixtures in my life, and I am so very grateful for them. Delicious, nutritious, easy to make and fun to love, this book should be in everyones, vegan or not, kitchen library.

I'm a recent vegan/vegetarian. I've never been a good cook. I stuck to weight watchers cook books because they were easy and I could understand what I needed to do. This book is great! It has sections on what the main ingredients are and where they're located in the grocery store. So exciting! My husband and I have made 5 meals and loved all of them.

This cookbook lets you cook recipes that result in food that is very much like what you were eating before you went vegan. This book also gave me ideas for my own way of converting recipes to vegan. The author has a great writing style. I really like her.

I was reluctant to try any pasta "cheese" dish, having always been let down in the past, but I LOVED the mac and cheeze recipe! It's so good I would even serve it to my non-vegan friends! I also tried the fettuccine alfredo with the second sauce recipe in the book, and that was good as well. Another thing I suggest trying from the book is the "Tahini Coffee". Although don't expect it to taste like coffee, it tastes kinda like ovaltine, but better. I can't wait to try the peach cobbler too!
