I feel truly blessed that our book The Rice Diet Solution has achieved such a wonderful reception by so many people. Many Ricers ("Ricer" is our affectionate name for any participant or reader who lives the Rice Diet), have been asking for more recipes, menus, and general practical advice about how to make the Rice Diet a lifelong venture. And recently, while compiling our Web site's Forum recipe responses, I was further inspired by the plea "Would some ambitious person please compile all these great recipes in a book? I would sure buy it!"
So this cookbook is my heartfelt response to the thousands of people who called us, wrote to us, came to us, or e-mailed us at the Rice Diet Program in Durham, North Carolina, asking for more recipes and meal plans so they could continue living the Rice Diet. Indeed, this collection of easy recipes, menus, and meal plans was inspired by many of you! In this way The Rice Diet Cookbook is the ultimate group effort -- a mixed and varied collection of delicious, easy-to-make, personal favorites from our ever-growing Ricer community. Like a true melting pot, the recipes are the creation of our chefs in the kitchen, our foodie friends on the medical and Rice Diet Store staff, veteran and seasoned Ricers themselves, as well as readers of The Rice Diet Solution and Web-Forum participants. And, of course, our family and personal friends also wanted to contribute their favorite quick and simple meals!
As many of you no doubt know, community is a consistently key component of the success of the Rice Diet and our program. With the support of like-minded friends, you are bound to succeed; without them, you face unnecessarily difficult challenges. This cookbook is both a testament to the inestimable power of community and an expression of gratitude. Recipes and Meal Plans
The Rice Diet Program was founded in 1939 by Dr. Walter Kempner, who was at that time associated with Duke University. He initially treated many kidney and high-blood-pressure patients using a nutrition plan based on rice and fruit, and produced dramatic, never-before-seen reversals of their symptoms. Dr. Kempner's practice and research then went on to prove that the no-salt-added diet reversed every risk factor of heart disease, faster and more safely than any method known. By the 1960s, thousands who were suffering from many different health problems, especially obesity and diseases precipitated by being overweight, were coming for the diet treatment.

One of the many things we learned from the readers of The Rice Diet Solution was that those already familiar with the Diet wanted the recipes categorized by Food Group, since many had learned how to eat in a healthier way by thinking of foods as fruit, vegetable, starch, fat, dairy, or protein. So we have presented the recipes in these categories to make creating a meal easy as pie!
You will find a Healthy Grocery List (see page 71) to help you shop, as well as common ways to prepare and conserve certain foods, such as how to cook grains and pasta; tips on how best to use leftovers for flavorful meals; and some interesting shortcuts to preparing meals on the go.
At the back of the book, you will also find many helpful tables and charts, including both an equation and the Body Mass Index (BMI) chart, which will help you determine your weight loss goals.
Another important feature included is the Sample Journal pages. As you will soon see, we feel it is of the utmost importance to record and keep track of your foods, your activities (i.e., exercise), and your thoughts and feelings -- on a daily basis. We also encourage you to keep track of your weight by weighing yourself each and every day at the same time. You may think that that much focus on yourself could get monotonous or make you self-absorbed. We actually think it can be freeing. The more you pay attention to your way of living, the more conscious you become of making the right choices and the less effort it takes.
