This book is full of wonderful recipes. Beautifully written and photographed. The recipes I have tried thus far have all been winners, and I can't wait to try them all. I keep returning to what has thus far been my favorite: roasted eggplant and potatoes. So easy to make and super delicious. I highly recommend this book for anyone who loves vegetables or is looking for ways to add more veggies to their diet.
