Julia Garcia has come up with another quality cookbook that is easy to read and easy to follow. Prior to this book, I had little to no experience with a pressure cooker. I have been interested in purchasing one, and this book came at the right time. In addition, Garcia’s focus on Mediterranean recipes reinforces the notion that a pressure cooker is a fantastic choice for healthy eating. The variety of recipes is the first thing that caught my attention. As expected, the cookbook recipes are veggie- and meat-centric. The Did You Know? Section of recipes is a welcome addition that helps to bring each recipe to life. While the recipes are relatively easy to prepare, the food combinations are what impressed me most: collard greens and shrimp, shrimp stew with Brussels sprouts, squid ink pasta with trout fillets, chickpea stew with onions, chicken pudding with artichoke, chicken with Swiss chard, and a ground beef omelet. Garcia ends the book with a meal plan, shopping list, and conversion tables. Overall, this cookbook is an excellent resource for healthy Mediterranean-themed recipes with short cooking times.
