First, my family is not gluten sensitive, but the recipes contained in this book are wonderful for those who are and those who aren't! You can't beat America's Test Kitchen cookbooks because all recipes have been tested and retested for flavor and preparation.

I have both versions of this book - which is wonderful; I live in the UK and so could only get the paper version of the book, so when I was recently Stateside I purchased the ebook version, but there is a problem with it in that certainly on three recipes I've seen the ingredients list is "merged" meaning it's impossible to read. That being said, the recipes I've already tried are wonderful - colleagues queuing up for the Lemon Drizzle Cake (and coming back for seconds), and  brother who was visiting from Scotland devoured the Midweek Meat Feast, and the gallantly said I could make some more for him to take home! Absolutely lovely book and the recipes are fab, but unable to give it 5 stars due to formatting issues on the ebook version.

This is a really cool recipe book. They give you a recipe for a flour blend and most of the recipes then call for their blend or of two common store-bought blends. I made their blend and it was really simple. The book is full of recipes like bread, cake, pie crust, pizza dough and so on. I only made the cupcakes so far and they are the best gf cupcakes I ever tasted. If all of the other recipes are just as good, this book will be a winner. This book is from America's Test Kitchen so it also goes into the science of all their recipes.

This cookbook does not disappoint with its claim to be "revolutionary" and "groundbreaking," and through exhaustive recipe and ingredient testing, they have set a new standard for gluten-free cooking.  We have a number of celiacs in our family, and it has been a challenge to find high quality food rather than mediocre, gritty substitutes. This resource not only provides outstanding recipes that everyone can enjoy, but it also provides the techniques and theory base for adapting other recipes, such as family favorites.  If you are or know someone who is celiac, this is the must-have book.

Not timeless, because many current products are mentioned and compared in this cookbook. And that's the ONLY reason I gave this book 4 stars instead of 5. However, that's the only "future bad" thing about it. This book gives good background info on every product (flour, starch,etc) you may use, as well as tips and techniques for EACH recipe. It's not so much a basic cookbook, as it is a "replacement" cookbook. It mainly shows you how to change popular recipes to be gluten-free.

This volume really does cover a lot of introductory information all the way from "The Basics of Gluten Free Cooking," to rating of a number of ready-made products, and a discussion of the various gluten free grains. It should be noted, however, that in order to get the most use out of this book it will be necessary to invest in quite a variety of ingredients as well as making sure that the necessary cooking/baking utensils and pans are on hand. If you only plan to make the occasional dish, this volume may provide more information than you need, but if you are serious about gluten free cooking and baking this book certainly deserves a place in your kitchen.

This is a terrific book with lots of great recipes for those needing gluten free recipes or even for those like myself, that might like to eat more healthy that way! Thank you also for the quick shipping - excellent. I would highly recommend this book.
