pig pickin' poke cake

While this may be a new cake for some people, this classic Southern cake's flavor has nothing to do with pigs or pork! It is often served at pig pickins — or pig pulls or pig roasts — all over the South. Mandarin oranges and pineapple combine in this tasty cake that is a cinch to put together. Great for barbecues and potlucks, this cake is sure to please.

Remove from the oven and let cool for 10 to 15 minutes. With the handle end of a wooden spoon, poke holes all over the cake; make plenty of holes so the filling can soak into the cake.

POUR the sweetened condensed milk over the cake, filling the holes as much as possible.

EMPTY the pudding mix into a medium-sized bowl and add the pineapple with juice. Mix until well combined. Add the whipped topping and mix well. Evenly spread the whipped topping mixture over the poked cake, filling the holes as much as possible. Place the covered cake in the refrigerator for at least 4 hours.
