About the Author

Gretchen Scalpi works to promote good nutrition and wellness as an entrepreneur, cookbook author, health and wellness coach, consultant and speaker. Gretchen is a Registered Dietitian & Certified Diabetes Educator. She is also a Certified LEAP Therapist (Lifestyle Eating and Performance), specializing in the clinical management of food sensitivities and related conditions. Gretchen is a featured diabetes expert on Everyday Health for the Type Two Diabetes topic.

Gretchen received a BS in Human Nutrition and Food Service Management from Marymount College in Tarrytown, NY. She worked as Chief Clinical Dietitian in an area hospital for 25 years, and has taught nutrition and food services courses in two area community colleges.

Gretchen opened her health and wellness coaching and private nutrition practice in 2002 and has expanded to three office locations in New York. She has worked with hundreds of clients in Dutchess and Orange Counties. Gretchen's practice provides individual nutritional counseling, health and wellness coaching in the areas of diabetes, weight management, food sensitivities, gastrointestinal disorders, and general wellness. I admit it. I have food issues. You can give up vices like drinking and smoking but how do you give up food when it is a problem for you? The truth is that you can't. If you struggle with eating healthy then this book is for you. There are thousands of books out there about diets but few that focus on actual nutrition and REAL healthy eating. We all know a few things about healthy eating like cutting back on sweets but after reading this book I realized there is much that I don't know. The author begins the book with two real case studies from her nutrition practice. I found those stories motivational and it made me eager to read the rest of the book. I recommend this book for anyone who wants to learn more about healthy eating but doesn't want to go on some crazy diet that doesn't work. This book would be a great pick as a gift for you adults who need to know more about a healthy diet and for anyone who has food issues. The appendices alone make the book worth what you pay for it.

This is an insightful book, which introduces a consumer to a healthier and less expensive way of preparing and eating foods. People in general are often drawn to a meal that is quick and easy, thus leading them to consume take out or restaurant prepared foods. The author, being a Registered Dietitian & Certified Diabetes Educator, teaches the reader the importance of healthy eating.   Eating right and consuming fewer fats and calories can establish a healthy weight loss routine or a weight stabilization plan. Take out foods or restaurant prepared foods are often very high in fat content which provides more calories than needed for a person to consume. Within the pages of the book, the author gives tips and full descriptive recipes for healthy, low calorie and tasty foods.   Quick Start Recipes for Healthy Meals provides the consumer with an interesting selection of breakfast, lunch, dinner, and even dessert-snack recipes. These recipes include most of the food pyramid: dairy, vegetables, fruits, poultry, red meat, fish, and even some low fat content sweets. Two of the most intriguing aspects of the book is that the author provides a complete nutrition facts chart with each recipe along with the ingredients needed to exchange with others to make the meal diabetic friendly.
