About the Author

After earning a MFA degree in English, Chatham began his career as a writer competing in short story competitions and submitting material to various literary publications. During a stint in Asia, he began writing for economic publications and travel guides. Ultimately, his time living abroad inspired him to combine his passions: writing, food and travel.

I just bought this book, which made me go right out and get quinoa too! I just turned 40 and my husband is just a few years younger; together, we are making a lifestyle change to be healthier. This is for our kids, as well as us. We want to live a long, happy life. I really didn't know much about quinoa before reading this book, but I had heard that it is a healthy choice. I hadn't read anything by John Chatham, either, before this book, but looking over reviews, he came highly recommended so I thought 'why not?' I'm so glad I went for it! First, the book is like a 'quinoa 101' course. I learned so much, but in a way that was easy to understand. It was really fascinating actually. However, I must admit the pictures were what hooked me. They are so enticing, high gloss and vivid. This isn't your typical cookbook. The author spends quality time teaching you how to prep the quinoa, what to look for, how to store it, and of course, provides delicious ways to incorporate it into your diet. Then, he includes lots of visuals to make it more concrete. So far, I've tried the granola and Greek style burgers. My whole family loved them! I'm going for the breakfast bars in the morning. It looks like Chatham has several books in this genre so I might add a few more to our library to help us make the change to healthy eating.

I like to fancy myself as a bit of a foodie and a chef in the kitchen. I like to try new dishes, new foods and experiment. Started to hear about Quinoa (had to learn to pronounce it first!!!) and then how to cook it and well. I was intimidated at the beginning but now I've spread my wings and I can honestly say, it's my new super wonder food! Chatham's book is packed with delicious and fun to make recipes - my favorite thus far is the asparagus risotto quinoa - just yummy. The book also goes a step further providing meal suggestions and makes cooking with quinoa a joy. I love this cookbook and I've won over every single member of my family who have gone from "we're eating what?" to "how about mac 'n' cheese and quinoa tonite?" Excellent cookbook. Highly recommend it.

Having grown up on oats and rice, I had never heard of quinoa, much less tried it. At the suggestion of a co-worker I made my first batch using a recipe that was given to me. Basic quinoa is cooked much like rice, but it is way more versatile. This cookbook takes you far beyond the basic preparation instructions and is full of entire meals based off of quinoa. Some of the great recipes include, pancakes, bread, stuffed peppers, creole salad, even oatmeal cookies. The recipes provide step by step instructions that even I can follow (I once ruined grilled cheese). There are various photos of some great looking recipes that make you want to try them all.

The Quinoa Cookbook opened my eyes up to all the different possibilities that this super-food has to offer. The cookbook starts out with simple ways to cook the quinoa, explaining how to prepare it and when it is done, before delving into the recipes, which was a nice crash-course for a beginner like me. I learned that quinoa is a lot like rice, and like rice, it expands when it cooks. Just be sure to give it a quick rinse in cold water first. I made the Quinoa Fried Chicken Cutlets for dinner one night and even my red-meat-and-beer-loving husband went back for seconds! The back of the book contains Japanese, Mexican, Italian, Greek, Indian, African and Hungarian quinoa recipes, so there are more than enough meals to satisfy you and your family. However, those who are on a gluten-free diet should double-check all the ingredients in the recipe to ensure that they are, indeed, gluten-free.

I was completely new to quinoa, but this book was perfect for beginners. The author shares all of the great benefits of quinoa before diving into how to use it just about any recipe. There really are recipes for every time of day and every style of food. There are original recipes for hearty breakfasts (Quinoa Pancakes with Vanilla and Orange Zest) and quinoa soup recipes for lunch and dinner. There are also two sections for “advanced quinoa cooking” – one for ethnic foods like Italian or French style recipes with quinoa and then a section of “classic American” recipes – things like burgers and macaroni and cheese with quinoa This is a straightforward cookbook great for beginners or experienced quinoa cooks. The recipes are easy to follow, diverse, and have a great range of flavors.

I was fascinated by the history of the crop and how many uses it has today. The cookbook is excellent and provides information on everything you need to know about Quinoa from where to buy it, to preparing it. The recipes in this cookbook are very easy to make but also offer a wide variety of options for cooking with Quinoa. For example, you can bake a cake with Quinoa! The cookbook also includes recipes so you can integrate Quinoa into international foods and your favorite comfort foods. I am excited to use this cookbook to reap all the benefits Quinoa provides!

The Quinoa Cookbook by John Chatham is not like other cookbooks, this cookbook has a tremendous amount of recipes that can be used for any meal. Quinoa is a great source of nutrients and is easy to prepare for breakfast, lunch or dinner. Quinoa can replace different grains in the diet, such as rice. The book’s recipes include step-by-step instructions as well as pictures. The book explains how to prepare quinoa, store it and even make quinoa flour to use as a replacement for wheat flour. This book will help the reader not only learn about quinoa, but also be cooking with it like a pro in no time.

I’ve heard a lot about quinoa—how it has many health benefits and a lot of protein, even though it is a grain. Though a friend made me quinoa (badly, as I now know) in the past at an experimental meal, I’ve become more interested in trying it again since I’ve recently begun a higher protein and lower carb lifestyle. This affordable cookbook was just what I needed to have a good second impression of quinoa! The author lays out a few different ways to make ‘basic’ quinoa, and then lets the rest of the cookbook build upon those basic preparations. I know how to make quinoa well now, it’s tasty, and I’m excited to try making Quinoa Pesto Salad next!

Quinoa is a fairly new grain to me.  Quinoa was on sale at our local farmer's market so I bought about a pound of it but had no idea what I was going to do with it.  I bought this book at the recommendation of a friend.  I am so glad that I did.  This is more than a cookbook.  As a history buff, I like all the background information.  As this is a new ingredient for me, I appreciate all the helpful tips.  I am anxious to try to make my own quinoa flour and some of the recipes that go with it.  Overall, I would highly recommend The Quinoa Cookbook by John Chatham.  I am glad I have it as a resource into my new foray of cooking with quinoa.
