James Africano is the Executive Chef at Ted Turner's Vermejo Park Ranch in northern New Mexico. In his six years with Vermejo, James has been adding a modern twist to the fare associated with Ranch and Southwestern Cuisine. Focusing on seasonal produce, game meats (bison in particular), and fresh seafood he has created a dining experience on par with the spectacular fishing, hunting, and outdoor activities that define Vermejo Park.
After being asked almost nightly to cook the fresh trout that guests caught, he was inspired to create "Trout on the Fly." This cookbook was created with the intention of giving the average home cook twenty-one quick and delicious recipes for their fresh-caught trout.
