We have several children who recently decided they felt better after eating vegetarian than they did from the traditional meat-and-potatoes American diet. We found that incorporating more meatless and/or vegetable dishes at every family meal not only gave them something they could eat happily, but helped everyone eat more healthily. But you know, you can only eat mac and cheese so many times. Enter Vegetarian Heartland. It’s helping our family eat more healthily — and deliciously. Many dishes are super easy to make, and are far more clever and inviting than I’d have expected. Pro-tip: If you’re planning on opening an upscale vegetarian restaurant, here’s the book to “borrow” your menu from. They’re inventive, and make for fantastic eating. I suppose my favorite is the coconut curry shakshuka — why did I not think of this before? I may not be a vegetarian cooking genius, but I can recognize such genius when I see (and taste!) it. Wonderful book.
