About the Author

Whacker Hennessy, otherwise William Harrogate Hennessy, is the last of the "WH" Hennessys from Ratass in the Kingdom of Kerry. His third cousin, twice removed was related by marriage to the second cousin, thrice removed of Richard Hennessy the founder of the world's leading brand of Cognac, Hennessy.

Whacker says he himself has been removed many times from various drinking emporiums.

Whacker was educated in Gormantown College in Meath, Clongowes in Kildare and following expulsion from there was placed in Ampleforth College in Yorkshire in England. He studied Philosophy and Politics at Trinity College Dublin but spent most of his time in McDaid's Pub in Dublin's Harry Street and the holding cell of Pearse Street Garda Station around the corner, singing ballads and reciting poetry.

Eventually, his great uncle Glasser Hennessy provided the funding for him to be sent to Le Cordon Bleau catering college in Paris. Whacker spent two years there but left before qualifying because he couldn't understand the language. He returned to Dublin, completed his degree in culinary arts and headed for Australia.

For the next ten years he travelled the world, cooking in some of the most famous and prestigious Michelin star restaurants before returning to his beloved Killarney.

Whacker Hennessy's Fifty Alcohol-infused Classic Recipes is his first cookery book. He is already working on a second which should be out in the Summer of 2016.

He is married to his childhood sweetheart Colette, a union blessed with three beautiful daughters, Ellie, Mia and Fat Betty.
