About the Author

Elena Torsiello, is an English As A Second Language teacher in the Willlingboro School District. She teaches K-4. She resides in East Windsor, New Jersey with her husband, James who has learned to cook gluten and dairy free due to her diagnosis of Celiac Disease at the age of 40. She suffered for years without a diagnosis. Now at 53, she has been on her diet for 13 years and has helped numerous other newly- diagnosed Celiacs cope with this life-changing diet. Her mission is to educate the public about this genetic autoimmune disorder and how to cope with and live a happy, healthy and positive life style in spite of the disorder. Having Celiac Disease has opened doors she never would have explored in the culinary world. Elena has had the opportunity to explore different grains in cooking, and also in baking gluten- free and dairy- free. At times it is challenging, but with each passing day, it becomes much easier. Now there are more and more companies producing gluten- free and dairy free- products as well as restaurants offering gluten- free menus. Her mission is to help people avoid years of suffering that she endured not knowing she had Celiac Disease and be proactive in diagnosing this disorder.
