Katie Stryjewski is a PhD—trained ornithologist, cocktail creator, and the voice behind the popular Instagram account @garnish_girl, where she shares inventive recipes and stunning drink photography with over 26,000 followers. After earning her doctorate in ornithology and completing postdoctoral research on bird vision at Harvard University, Katie traded fieldwork for mixology, blending her scientific expertise with her creative passion for cocktails. Fulmargarita
The Northern Fulmar (Fulmarus glacialis) is part of a group known as the “tube—nosed” seabirds, named for their unique, tube—shaped nasal passages. And these special noses do a lot! The shape of the Northern Fulmar’s nostrils give it an excellent sense of smell, helping it locate prey at sea. It also has special nasal glands that remove salt from its body, excreting it through the nostrils as a saline solution – an important adaptation for a bird that only drinks seawater. And when threatened, the Northern Fulmar can expel a foul—smelling stomach oil through its nostrils to deter predators (ew). That said, there’s nothing foul about this marine—inspired Margarita! It’s the color of the Arctic sea, infused with wakame for a subtle hint of briny sweetness. And don’t skimp on that salted rim!

Fulmargarita
2 oz. wakame—infused tequila*
1 oz. lime juice
3⁄4 oz. blue Curaçao
1⁄4 oz. agave syrup

Run a wedge of lime along the edge of a chilled coupe glass and dip it in sea salt to coat. In a shaker, combine tequila, lime juice, Curaçao, and agave. Fill the shaker with ice and shake until chilled. Strain into the prepared glass.

*Wakame—infused Tequila
1 cup blanco tequila
1⁄2 tbsp. dried wakame
Combine tequila and dried wakame in a mason jar and shake gently. Let infuse overnight, then strain through a fine—mesh strainer.
