Many people have said for years that there is no nutritional value in mushrooms. In fact, mushrooms contain vitamins A, C, D, and all the B complex vitamins. Recently scientists have identified folic acid and selenium, as well. Mushrooms also contain no fat, little sodium, and no cholesterol, and have very few calories. However, it is extremely important to know your mushrooms when collecting for consumption in the wild. Just because you have collected and eaten something in the East or in Europe or Asia, does not mean it is the same species in another area of this country or in the world. Make sure you have accurate, local information. Joining a club or contacting a professional in the area where you can learn what is good and what is not is most important. Remember: When in doubt, throw it out!
