About the Author

Gabi Steenkamp, a registered dietician, has been practicing for over 25 years and specialises in the use of diet to control diabetes and colon problems. Her involvement in the food industry as a nutrition and food-labelling consultant gives her a unique insight into South African foods and food products. She has presented many lectures and workshops on various nutrition-related topics, and has also published articles in many journals and magazines.
Liesbet Delport is a registered dietician, founder member of the Glycemic Index Foundation of South Africa (GIFSA) and a partner in a thriving practice in Nelspruit. She has been involved in GI research since 1998 and has a master's degree from the University of Pretoria. She regularly presents local as well as international talks to dieticians and the public, and she has written articles on various aspects of nutrition for magazines and scientific journals.
