About the Author

As an attorney, Ms. Pohl combined her skills as teacher, author and lawyer, to write legal books for the general public. She wrote a series of legal books covering topics of estate planning, probate and guardianship.

Amelia Pohl’s avocation, throughout her varied career was, and is, cooking. Beginning as a child with her first attempt (chocolate pudding made from a package) she collected and worked her way through countless cook books, always enjoying the challenge of trying to achieve the perfect cookie, cake, pie — the perfect meal. When her husband was diagnosed with Celiac disease, the challenge
increased tenfold. It took her years of research and experimentation to prepare gluten free meals and desserts with the same results as their favorite wheat based dishes. She shares that knowledge in this the first of a series of three gluten free cook books that she has written.

I’ve written many books over the years. None so labor intensive as this one. I first had to research ways to make a popular dessert. Next I needed to adapt that recipe to the gluten free diet. Once I thought the recipe might work, I made it to see if it looked, tasted, and had the same texture as the original favorite. More often than not, it didn’t and I had to start over again. It took me an average of four tries per recipe to get it right.

Of all the books and web sites I researched, the gluten free cook books of the late Bette Hagman were the most helpful. Bette was a pioneer, paving the way for gluten free cooking. Without her books, later cooks would have had to reinvent the “gluten free wheel.“

This book was ten years in the writing. Without Bette to lead the way, it would have taken twenty.
