Being the southern bell that I am, fried chicken is an old time favorite coming from my late grandmother Louie Mae Humphrie, popular road trip chicken that she would prepare when we would travel with the church on Sunday evenings; which would be the third service of the day!
I know we can be fans of fried chicken but let's get real with ourselves. When we indulge in fried chicken, we turn a blind eye to the health risk that can lead us into health drawbacks, leading up to death. Now, this book is not to offend our die hard fried chicken fans but some of the questions we should be asking ourselves; How often should we engage in eating it?
This Recipe book is dedicated to my late mother Theodora Justice; Fried chicken was her favorite and she made it a tradition to treat herself to some fried chicken every Monday after her trustee board meetings at church. Being that fried chicken shouldn't have been on the top of her list due to being a diabetic; fried chicken was the last meal she ate before passing away at home in her bed with a plate of fried chicken bones flipped over on the floor. As I was taking in the loss of my mother and trying to process the fact that; a food we love so much can sometimes not be the healthiest option when it comes to our diet, played a huge part in why she's not with us today. For a very long time, my mental state didn't allow me to accept the smell and sight of fried chicken. I was pretty much telling myself; F*ck a Fried Chicken!
With the outpouring of love from my husband and the food blog platform She Chefing fan base; I began to make changes in my diet that would soon change my entire life after a near death experience August 25, 2021. I had to come to terms with myself that; There are many things worth living for, a few things worth dying for, and nothing worth killing myself over. I pray this cookbook finds you right where you are on your journey and you begin to come to terms with creating a healthier lifestyle..
