This Recipe book is dedicated to my late mother Theodora Justice; Fried chicken was her favorite and she made it a tradition to treat herself to some fried chicken every Monday after her trustee board meetings at church. Being that fried chicken shouldn't have been on the top of her list due to being a diabetic; fried chicken was the last meal she ate before passing away at home in her bed with a plate of fried chicken bones flipped over on the floor. As I was taking in the loss of my mother and trying to process the fact that; a food we love so much can sometimes not be the healthiest option when it comes to our diet, played a huge part in why she's not with us today.
