Spinach and Cheese Quiche

If you'd prefer to use fresh spinach, you'll need about 8 cups of washed trimmed spinach leaves. Cook them in a large saucepan with only the water that clings to them, stirring as needed, until wilted, about 2 minutes. Drain well and finely chop.

Makes 12 servings

One 12-ounce can evaporated skimmed milk

1/3 cup low-fat cottage cheese

¼ cup grated Parmesan cheese

2 eggs

3 egg whites

½ teaspoon salt

¼ teaspoon black pepper

One 10-ounce box frozen chopped spinach, thawed and squeezed dry

Plain Pie Crust, baked and cooled

1. Preheat the oven to 425° F. In a medium bowl, whisk the milk, cottage cheese, Parmesan, eggs, egg whites, salt and pepper.

2. Place the pie plate on a jelly-roll pan; spread the spinach over the pie crust, then pour the filling over the spinach. Bake 15 minutes; reduce the oven temperature to 350° F and bake until the filling is set, 20 minutes longer. Let cool 10 minutes before serving.

I love trying new recipes, especially when I have started a diet to help me lose weight. The book had some really easy delicious recipes. I have used a new recipe each week for the last 6 weeks and have enjoyed everyone of them. I like how it gives the points for each serving so I do not have to figure it out on my own. I would highly recommend this book for anyone, even those not on the weight watcher's diet.

i'm not the best cook, but this book sure makes me feel as i have a niche in the kitchen. the recipes were eas to follow and were extremely tasty.

I was excited to purchase this cookbook, looking forward to some new recipes since I enjoy the 1999 edition so much. Was very disappointed to find that the majority of the recipes in this cookbook are found in the 1999 edition just recatagorized into different sections. This cookbook is great if you are new to Weight Watchers but if you already have the 1999 edition don't waste the money.

I have found this cookbook to be one of a kind. It list the basic ingredients that are found in many dishes that allow kitchens to be stocked with necessities. Therefore, you will have the basic ingredients on hand to save time and spend little time buying those few fresh items that complete the meal. These basic ingredints are not expensive and will allow for a tasty, home cooked meal in a simple way. Great for the busy cook:)

This cookbook is shear genious. It not only has points values but some are foods that can be eaten if you are on the core plan as well. I also like that in the back there is a section for baking. Especially holiday baking. It is in a nifty binder which allows the book to stay open with you in the kitchen. I recommend it for all who like variety.

I like the 3 ring binder style and the section table of contents. This is the one I will put extra pages into as I get into the loose recipes that coordinate.

I actually picked up this cookbook a couple of weeks ago and while I never thought I would "read" a whole cookbook, I have managed to do just that with this one. I am currently trying the recipes that I think would appeal to me and there are tons to choose from. The layout is simple and the instructions are easy to follow. You can look up things by point value (in the back), by course (table of contents), or just flip through and look at the wonderful pictures in the book. I just came home with this new book. I bought it at the store and it was encased in a plastic wrap and so I could not look through before I purchased it. While I think I will be able to use a lot of the recipes in the book, I am very disappointed in the quality. The paper is SO THIN that I feel like the pages will rip and the tabs are also made of paper. I thought the quality would be much nicer.
