These brownies fool everyone! You won’t believe how scrumptious they are (or how good they are for you) until you make them yourself. Just don’t serve them warm—it’s not until they’re completely cool that the spinach flavor totally disappears.

Prep: 15 minutes • Total: 55 minutes • Makes 12 brownies • Packable

Nonstick cooking spray
3 ounces semisweet or bittersweet chocolate
1/2 cup carrot puree (After peeling and trimming the ends, steam for 10-12 minutes and then puree in a food processor for 2 minutes)
1/2 cup spinach puree (Steam for 30 to seconds, then puree in a food processor for 2 minutes)
1/2 cup firmly packed light or dark brown sugar
1/4 cup unsweetened cocoa powder
2 tablespoons trans-fat-free soft tub margarine spread
2 teaspoons pure vanilla extract
2 large egg whites
3/4 cup oat flour, or all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

1. Preheat the oven to 350°F. Coat an 8x8-inch baking pan with cooking spray.
2. Melt the chocolate in a double boiler or over a very low flame.
3. In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla, and whisk until smooth and creamy, 1 to 2 minutes.
4. Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.
5. Pour the batter into the pan and bake 35 to 40 minutes. Cool completely in the pan before cutting into 12 bars.

These brownies are low in calories (only 133 per brownie) and saturated fat. They’re also packed with 3 grams of fiber (which is just crazy for a brownie!), while spinach and carrots provide two powerful antioxidants that help your kids’ eyes stay healthy.

First, I want to address those people who think 1/2 cup per recipe of pureed vegetables is not doing any good: You're plain wrong. When vegetables are pureed it breaks down the plant cell walls, which helps release MORE vitamins than you could injest if you ate them raw. Second, pureed vegetables are CONCENTRATED, so you get much more nutritional bang for your buck--have you ever seen how much fresh spinach it takes to make a 1/2 cup of pureed spinach? Third, isn't something better than nothing? The more vitamins you get your kids--and self--to eat, the better. Next, to all of the self-righteous you're-a-bad-parent-if-your-kids-won't-eat-fresh-veggies-people out there: You're also plain wrong. First, I DO always have fresh or lighlty cooked veggies at every meal. I am not--nor do I think anyone else is--using these recipes as a substitute for general healthy eating. Second, we're all just doing the best we can as parents to raise healthy children, and I think we should each do what works for us and our children. Last, I think the majority of the recipes are DELICIOUS! I have tried over a dozen of the recipes, and the only minor complaint I have is that some of the cake-type baked goods are more dense than their traditional counterparts. With that said, I absolutely LOOOOOVE the chicken nuggets--I think they're best with the broccoli puree. The blueberry oatmeal bars are also divine. As a final note, I can always get my kids to eat the desserts, but I haven't been as lucky with the entrees. Still, if my kids are eating desserts that are healthful, instead of the usual nutrient-void fare out there, then I don't have much to complain about.

Deceptively delicious was easy to use and has great recipes. Even after my daughter discovered the "secret" ingredients she loved the flavor. I have not made anything from the cookbook that wasn't good. The recipes definintely helps to get in all servings of fruits and vegetables recommended per day. I would recommend this cookbook for all levels of culinary accomplishment.

i love to cook and usually take recipes and doctor them to my family's liking. i don't think it's a big deal to toss in some 'special' ingredients into foods. the concept behind this book makes sense but it's certainly not new. my problem with it however, is that the recipes are terrible. nothing about tossing in a few healthy ingerdients says that it also has to taste bad. i've returned the book but have done some reseach and found that the 'sneaky chef' is a much better book with better and more favorful recipes. i have to admit the only reason i bought deceptively delicious was because so many people were talking about it. the ideas and concepts are good tips to have, the recipes are not.

After reading many bad reviews on this book I was leery of buying it. I borrowed it from my local library. I was actually very surprised at how good it really was. I do not understand the poor ratings. My family has tried: **Pita Pizzas (Very good, but found the spinach puree to be a little runny - will correct next time we make it) **Deviled Eggs (Always loved in our house) **"Buttered" Noodles (Kids didn't like the way it looked, and that is often half the battle. They DID eat it, and didn't complain once they had tasted it, but didn't ask for seconds or compliment it either. Will make this again, but only on occasion) **Greek Dip (Rave Reviews all around, HUGE hit. Kids loved it with both veggies and tortilla chips!) **Avocado Spread (Another HUGE hit at my house. Kids said it was almost as good as my homemade healthy guacamole... all it was missing was the tomatoes! So we added some!) I think the key to success with this book is to start with things from it you would normally eat anyway. Things like Mac-n-Cheese that has added healthy foods (we don't eat that in our house, so I never tried it). I also think it helps if the kids already eat relatively healthy. I don't think a junk food junky is going to find reform within the pages of this book or any other. Start them out healthy and then add to it with these recipes. Side note: Some of the recipes in this book are rather high on calories in my opinion, but to figure out the nutrition info you have to find a site you can input the whole recipe into! Rather tedious and frustrating. The next printing should include nutrition info since this book is all about making meals more nutritious. Just my 2 cents.

I am a work-at-home mom of a 2 year old, and I am constantly struggling with his (and my own) picky eating. The combination of this with not having the time and energy to prepare the healthy meals that I so want to serve to my family makes life in my kitchen less than fun! This book is SO easy to use - my grocery lists are shorter, the meals are healthier, and my time in the kitchen is actually fun and productive! The meals are surprisingly SO TASTY and are a hit with my whole family. I wish I hadn't waited so long to buy it - go out and buy it TODAY!!

I bought this for my daughter because her children will not eat vegetables and are very picky eaters. She prepares the veggies in advance and bags them for use at any time and she says her kids are eating a lot of these recipes. I guess we will all do whatever we can to make sure our kids get the proper foods.

I love the recipes in this book - especially the Blueberry Granola Bars. It also gives you great ideas on updating your own recipes. I like to use pureed pumpkin instead of oil.

This book is amazing. My husband wont eat any veggies or fruits. This book has been a wonderful help in keeping my husband healthy, even though he doesn't know I'm "lacing his food" with vitamins!

Deceptively Delicious is a good resource for getting more vegetables in your child's diet. The basic concept is simple: steam fresh vegetables, puree, freeze and store, then insert into foods your children like (pasta, chick nuggets, etc.) It isn't a substitute for serving vegetables, but as any parent knows a veggie battle isn't for every meal, and this is a way to ensure good nutrition.

My 4 year old son has autism and is sometimes BEYOND finicky. Texture and just how some foods look can send him into a fit at the table. The first recipe I tried was the mac-n-cheese. Although he ate about 12 bites, he still told me it was yucky. However, I found out why. It didn't LOOK like the mac-n-cheese he was used to. The next time I made it, I just did the boxed version and added the cauliflower to it - he ate it up no question and no complaint. I not only use Jessica's recipes but also incorporate the purees into my own recipes as well. His favorite so far are the Pita Pizza's, and we both just enjoyed the pancakes with Sweet Potatoes for our Sunday breakfast. Last night we tried the tacos with butternut squash and my husband thought the tacos tatsted even better with the puree mixed in. We're all eating healthier now and I'm thrilled to be getting some vegetables into my son, even if I have to sneak for a bit. I highly recommend this book to any parent.

It has a lot of creative ways to get different kinds of fruits and vegetable into your kids meals. I only know of a few kids who actually eat plain vegetables the way adults do, the rest of us have to try our best to get them to eat them. I've made and tried quite a few recipes in this book and was surprised on how tasty they were. Some recipes take a little too long to prepare, but you have to look at the long term effect ... your children. I really like the chocolate chip cookies ... who would of thought they were made w/chick peas!

I saw Jessica Seinfeld on Oprah and was inspired to try to get my children off peanut butter sandwiches and chicken nuggets every day. I went to my local library and borrowed both this book along with The Sneaky Chef. I was very disappointed with this book. The Sneaky Chef's recipes seemed much more appealing and were much easier to make. I am glad I thought to borrow from the library before purchasing this. This book has been returned, however I did purchase The Sneaky Chef from Barnes & Noble!

Absolutely love it! The kids have no idea I've added nutrition to there favorite standby meals. Once you get the stock of puree in your freezer it's a piece of cake. At first I cheated and bought a few jars of baby food but that would be too expensive to do consistantly. Do it yourself is much better.

I woudn't recommend this to those who haven't seen the actual book since the e-book version has no photographs of the recipes, but once you're familiar with the pictures it's great to have this as an e-book. I have it as an e-book on my I-phone, which works great for when I'm grocery shopping. I just choose the recipes I want to do that week and I make sure I get the ingredients listed. Then I take my I-phone with me into the kitchen and follow the recipes!

I have tried several recipes from this book. First I made the mac n' cheese. My kids had no idea there was cauliflower in it. However, their favorite was the chocolate chip cookies wth chick-peas in them. These recipes are very good and get kids to eat their vegatables without knowing their are eating them. (I am not a very good veggie eater either. So this book is good for me as well!)

This book is okay if you have time and are domesticated. My son (3 years old) actually loves the scrambled eggs with cauliflower in them. Also has good instructions about how to do everything. It can also get a little expensive buying all the fresh veggies.

Jessica Seinfeld presented a number of good ideas in her book. I think the book will be very useful for many mothers. When you compare this book to Sneaky Chef you will notice that Sneaky Cheff has more interesting receipes. The recipes in this book are not really very much children oriented. However, I like the Deceptively Delicious idea of making fruit purees instead of fruit juices as suggested in the other book. But overall, if you really have to trick your children to make them eat nutritious food, I think this book is worth your try.

I bought the book for a friend of mine actually as I do not have any problem serving veggies to my daughter. I think it is very important to properly guide the children from the very beginning and not to make them dependent on sweets, pop drinks, etc. Unlike most of her friends my daughter does not like coke (can you believe it?) and most of the junk food that I see other children are enjoying so much. I also think that very important is proper food combination as described in the book "Can We Live 150" -- a perfect addition to this book. I follow the author's advice to the letter and with great results so far.

I am an avid cook and have 2 older children who would eat any vegetable that was put in front of them. I now have 2 younger children who will not eat any vegetable except corn. One of those 2 is such a picky eater that she rarely eats anything and has gone through a phase of monthly weight checks. I have found that she is more than willing to eat several of the recipes that are in this cookbook. I have made modifications to meet the needs of my family. For any parent who has made homemade baby food, the making of the purees is the same principle. If you don't want to use freezer bags, invest in some inexpensive reusable containers. For those that are criticizing this book, how many of you thought of adding the purees to foods you were preparing? Hats off to Jessica for putting herself out in front of the public and giving other parents ideas for ways to help increase vegetables and fruits into their children's diets.

I don't have children but find it hard to get my veggies in everyday during the cold winter months when I don't feel like eating a salad. So far I have tried 4 of the recipes and have loved them. Making the purees is easier than I thought. I find most of the recipes quick and easy to make. I would highly reccommend this book to anyone.

I can't believe there are people criticizing Jessica Seinfeld for writing this book. This is a wonderful way to introduce vegetables into children's diets and believe me, even if you encourage your child to eat vegetables every day there are VERY FEW who will actually do it. Before I bought this book I went on and printed out several of her recipes. I tried them on my 5 year old and my husband and they were a hit! My 5 year old had the pancakes for breakfast and begged me to make more for lunch. As for criticizing Jessica for making money off of this book....Why shouldn't she make a living? Having your own identity is very important--especially if you are married to a celebrity. Good for you Jessica!

I do not have children, but I do want to eat healthier, so I bought this book for myself after seeing Jessica on Oprah. To those who are criticizing her for not giving proceeds to charity, if you read the back cover of the book you will see that a portion of the proceeds does go to a charity aimed at helping kids to eat healthier. After seeing Jessica on Oprah and reading the whole book, which was easy to do because it so organized, I did not get the feeling she's just out to make more money. Who cares if there are other books out there that have done similar things - there are tons of cookbooks out there to begin with choose what's right for you! I have used purees in recipes in place of oil to reduce fat, and was glad to find a cookbook with actual recipes for some of my favorite foods. I haven't tried all the recipes yet, but the brownies sure are good! I choose to store the purees in reusable containers for the environmental reasons - just because she suggests baggies, doesn't mean you have to use them - use your head! One of the things I love about the book is that she includes comments about the recipes from her children and Jerry - it's a fun read! Thank you, Jessica!

I have read all of these reviews, and I think there needs to be a man's opinion...because, as a single dad, I have a hard time getting my daughters to eat right. I just picked this book up, and am reading it as quickly as possible. But, for any men out there--thus far, its a great read...pick it up!
