Lipids: Chemistry, Biochemistry, and Nutrition

For a number of years, we have been teaching a course on the chemical, meta­ bolic, and nutritional aspects of lipids to graduate and postdoctoral students in the health sciences at the University ofCalifornia, Los Angeles.
