Daily life during a pandemic is unnerving enough without constant worries over whether you will go hungry tomorrow or have enough nutritious, sustaining meals to feed your family. This ongoing shortage has become more crucial than ever as local hunger relief programs observed a 40% rise in food insecurity and the need for assistance during the pandemic. I vividly remember being a young mother, scrimping to buy my toddler meat and vegetables and being grateful for my own meal of oatmeal and tea. The current situation is even more challenging, due in part to the constraints imposed by Covid-19.

Access to nourishing food is difficult for countless people in rural, inner city and low-income communities. Many people are forced to eat the most highly processed and least nutritious food - because it is the only food available and affordable near home. Although highly processed food may help people meet their calorie needs, it does not provide the essential nutrients necessary to keep them healthy. Many forms of malnutrition result from these circumstances.

Thankful for being retired, healthy and financially secure, I spent my time in isolation improving my own health and creating this cookbook in support of people facing a lack of proper nourishment. My objective is to share wholesome, comforting, and thrifty recipes to help all cooks be more creative using whatever ingredients are available. All royalties from the sale of this publication will go to the local food bank and my neighbors experiencing food insecurity during these challenging times.

About the Author

Judi Berman-Yamada (aka Kitchen Maven) successfully baked her first pie at age 10 and promised herself, at the time, to practice preparing the foods she most enjoyed - especially baked goods - until skilled. Over the years, she met her challenge and now shares some of her favorite simple, nutritious, and tasty recipes in "Thrifty Comfort Cooking for Challenging Times".After earning an AAS Degree in Restaurant Management, she worked in several food service capacities, including food service supervisor for a Portland hospital, Sous Chef in a Dundee country inn, baker/kitchen manager for a Newberg café and head cook for a Corvallis sorority. While living in Corvallis, Judi earned a B.S. in Sociology/Human Services at Oregon State University and began working in Juvenile Justice. During that time, she also won a food writing contest conducted by the Corvallis Gazette Times Newspaper and spent three years writing a weekly freelance food column for the paper. She has also written food articles for the Portland Examiner, The Tillamook County Pioneer, and several non-profits.In Portland, Judi taught cooking classes at her neighborhood community center and, through her business, "Portland Home Cooking," facilitated culinary team-building events for employee teams from companies such as Microtek and Intel. At the same time, she and her husband Rod ran a popular bed and breakfast, "Portland Urban Cottage" where they accommodated patrons from as far away as Denmark and Australia.A competitor in several nationwide cooking contests, she won the Rodale Organic Gardening Magazine 2010 grand prize. In 2012 she was a finalist in the Foster Farms chicken recipe and cooking contest at the Culinary Institute of America in California, and in 2013 was a finalist at the National Festival of Breads in Manhattan Kansas.A Multnomah County Master Gardener, Judi loves growing fruit, vegetables, and herbs all over her yard in Twin Rocks Oregon, when she's not beachcombing, writing, or cooking. She and Rod live just two blocks from the beach, with their kitty girls, Elvira, and Kuro Neko.
