About the Author

Back in 1984, Vickie Hutchins and Jo Ann Martin, next-door neighbors raising their families in the little town of Delaware, Ohio, started Gooseberry Patch. They were two moms with small children looking for a way to do what they loved and stay home with the kids too. They shared a love of home cooking and making memories with family&friends. After many a conversation over the backyard fence, Gooseberry Patch was born.

Recipe

Autumn Acorn Squash

2 acorn squash, halved and seeded
2 apples, peeled, cored and chopped
3 T. brown sugar, packed
3 T. chopped pecans
1 t. all-purpose flour
¼ t. cinnamon
2 T. butter, softened

Place acorn squash halves cut-side down in a greased 13"x9" baking pan. Bake at 350 degrees for 30 minutes. Combine remaining ingredients. Turn squash over and fill with apple mixture. Bake, uncovered, for another 15 to 30 minutes, until squash is soft when pierced with a fork. Serve squash halves as is or scoop contents into a serving bowl. Serves 4.
