You could think of a thousand different ways to define Poetry, but the first that may come to mind is that of your very soul transcending your chest in flames, eager to be either written down on a piece of paper, or gently whispered to someone's ear.

If the heart could speak, Poetry would be its voice.
To quiet it down would be to stop breathing.
