Garbanzo. Cannellini. Fava. Calypso. Edamame. Adzuki. It’s true: beans have the coolest names ever. But besides that, they’re also one of nature’s most perfect foods. But with so much versatility and variety, where does one begin? Right inside these very pages, that’s where. In The Great Vegan Bean Book, author Kathy Hester primes you on everything you need to know about the best way to cook—and eat!—every bean you’ve ever seen (and a few you probably haven’t). From soaking times, to cooking times, to what to purée, to what to sauté, you’ll be dancing delicious circles around those legumes in no time.
Not only that, but you’ll also get to try your hand—or is it your mouth?—at some of the tastiest, most innovative bean recipes in this lentil-filled land. From beanalicious burritos, to pretty-pea curry, to legume-laced blondies, you’ll be partying protein-style, every meal of the day!

A delicious collection of recipes that offers not only good health but great food. You absolutely can and this tantalizing collection of recipes compiled by bestselling author Kathy Hester proves it. Has there ever been a more generous ingredient than the bean? Down-home, yet haute, soul-satisfyingly hearty, valued, versatile deeply delectable, healthful, and inexpensive to boot, there’s nothing a bean can’t do. If you like beans or would like to add more beans to your diet, this is the cookbook to pick up. I can't imagine that there is any information about beans that I would like to know that is not in this comprehensive, 100-recipe book.
This book is outstanding! The Hutterite Soup is one of the best soup recipes I've ever had (I make it with pinto beans). She includes lots of options to help people that want low-fat and other options. The pictures are good and the ingredients are easily available. I've tried a few other recipes and they've been excellent as well. This is the best bean recipe book I have.
