Blueberry French Toast Casserole

1 loaf (20 ounces) bread, cubed

1 package (8 ounces) cream cheese, cubed

1 cup fresh or frozen blueberries

12 eggs, beaten

2 cups milk

1 teaspoon vanilla

1/3 cup maple syrup

powdered sugar

Place half the bread cubes in a greased 9 x 13-inch pan. Layer cream cheese cubes evenly over bread. Sprinkle blueberries over top. Cover with the remaining bread cubes.

In a large bowl, whisk eggs, milk, vanilla, and syrup. Drizzle egg mixture evenly over bread. Cover and refrigerate 2 hours or overnight.

Preheat oven to 350 degrees. Cover and bake 30 minutes. Uncover and bake 25-30 minutes more, or until center is firm and top is golden brown. Lightly dust the top of the casserole with powdered sugar. Serve with blueberry or maple syrup. Makes 6 servings.

    Love the dishes!!!

    I borrowed the 101 ideas to do with a slow cooker book from a friend to get some ideas. Well, after trying a few recipes in that book, I was hooked and went to buy my own copy. I saw this casserole book and purchased it as well. I now find myself planning the recipes for the week and they are so simple! It is a great feeling (for those who don't normally cook, like me) to have your family love the dishes!

    Definitely worth it.

    With most cookbooks, I buy them and use only a few recipes because they require too much time to prepare or they require too many ingredients. However, I would definitely give this little cookbook a try. We have tried 6 different recipes (since we purchased it 6 weeks ago), Ritzy Chicken, Fiesta Chicken, Delicious Chicken, Stuffing and Turkey, Jambalaya and Broccoli Chicken. My wife and I think they have all tasted good and they usually last three to 3 to 4 days since most of the recipes make 4 to 6 servings. Definitely worth the $10 to buy.
