Katie has the heart of a researcher. She is a wealth of information when it comes to nutrition and quite honestly, she’s my go-to girl when I want to know the nitty gritty details about food science. So, know that you’re going to learn a lot from this book — not just how to cook a bean!

She includes a huge variety of recipes from making a broths from scratch to preparing wraps, main dish meals, and even brownies using beans!

Here’s what else is great about Katie’s books, they are SUPER COMPREHENSIVE. This girl doesn’t forget a thing and makes it very easy on the reader to find recipes or info, to know how frugal the recipe is (frugality is a big focus of this book), how easy it is, where it falls for those with dietary restrictions, and how kid friendly it is.

Recently I stumbled across a terrific cookbook that has just about blown my mind. Katie Kimball is the author of The Everything Beans Book … and I think she’s my new hero.

Katie has put so much attention to detail into each recipe. Almost every recipe has an accompanying full page of notes on substitution and frugal ideas, details to troubleshoot and also freezing tips.

Pasta with White Bean Sauce is an easy white sauce, but the flavor is impressive! In the end I thought the cheese, beans, -- everything was just right about this sauce.

The recipes are tested -- by Katie and her team. I feel confident making these recipes, and there is lots of info about the recipes and beans in general. I was quite impressed!

Now that gas prices and grocery prices seem to be going up, up, up, it is a refreshing change of pace to come across a great resource dedicated to frugal, flavorful meals. The Everything Beans Book is a fantastic, well-designed book. It de-mystifies beans and legumes and offers information and ideas on the how, when and why to use these frugal, flavor-packed gems, from tips on using canned beans to techniques for cooking from dried as well as encouragement for even the worst legume-a-phobes.

The most recent research, published 10/2012, reported people who add 1 cup of beans to their diet every day lost about 5 lbs. That's not "saving your waistline," and fat people don't need to be "saved" anyway. Why why why why do amateurs, bigots, wannabes think they can say anything they want about fatness and weight, etc. etc, with absolutely NO DATA WHATSOEVER to back them up, and get away with it?
