About the Author

Brother-sister team Matthew Holm and Jennifer L. Holm began their empire young, selling painted rocks door-to-door. Jennifer eventually moved on to selling Girl Scout cookies, while Matt focused his entrepreneurial energies on the marching band's annual hoagie sale. Today they prefer eating food rather than selling it. Heroic Dodgeball Cupcakes

(Makes 12 cupcakes)

      1 1/2 cups all-purpose flour
      1 1/2 teaspoons baking powder
      1/2 teaspoon salt
      1 tablespoon cocoa powder
      1 egg plus 1 egg yolk
      1 cup granulated sugar
      1/2 cup canola or vegetable oil
      1 teaspoon vanilla extract
      2 tablespoons (1 ounce) red food coloring
      1/4 cup whole milk
      1/4 cup heavy cream

Line a muffin pan with 12 paper cupcake liners. Heat the oven to 350°F.

Sift the flour, baking powder, salt, and cocoa powder into a medium-size bowl and set aside.

In a large bowl, use a mixer on medium speed to beat the egg, egg yolk, and sugar together until they lighten in color, about two minutes.

On low speed, blend in the oil, vanilla extract, and red food coloring. Add the milk and heavy cream and continue mixing until blended. Add the sifted flour mixture and blend until smooth.

Divide batter evenly among cupcake liners. Bake for 20 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean. Remove the cupcakes from the pan and allow to cool completely on a rack.

Red Knockout Frosting

Can of white frosting
1 tablespoon (1/2 ounce) red food coloring
Cinnamon candies (like Red Hots)

In a bowl, mix the frosting with the red food coloring until combined.

Using a rubber spatula, spread the frosting on the cooled cupcakes. Top with cinnamon candies, and serve.
