My husband is restricted to 1000mg of sodium daily to help with Meniere's Syndrome that affects his hearing and that is a difficult task to maintain. I have found 3 cookbooks but THE NO-SALT COOKBOOK is the best of the three of them! It has many recipes for normal things such as pancakes, waffles, popovers and other items that we were used to eating in our no-restriction eating. It also gives suggestions as to where to get some of the harder to find no salt items such as baking soda. I take this book on vacation with us when we have kitchens available and feel like it is an important vacation item. It also has an index of normal foods and their salt contents. I tied together two12" narrow red ribbons then hot glued them in the back of the book and now I have 4 ribbon markers for the ease of finding my page and recipe more easily. If someone is watching their salt intake, this is the first book they should purchase. The No-Salt Cookbook is my cooking Bible!
My dad has Amyloidosis which has led to congestive heart failure and giving up his dill pickles, soups and other salty foods has been very hard, combined with the fact that many people have little understanding of sodium levels and alternatives. This book tells you how much is in every ingredient listed as well as the total for each serving combined. It even has a recipe for his precious dill pickles! I'm buying one on-line now for a friend in our support group struggling with the same issues. Education is key when fighting for your life and this book makes it easier to enjoy your food without sacrificing your life and you can't beat that!
