This book, in my opinion, is one of the best cookbooks if you are interested in simple French cooking. Having Escoffier and Julia Child's cookbooks in my kitchen, I was somewhat daunted by all the steps to making a decent French dish. However, when I purchased this book, I really started on my way to really understanding the simplicity of wonderful food. The book is divided into various sections. Salades, Soups,......all the way to a little glossary of sorts to help you with sauces, creams, etc. I've made so many of the recipes that the book got kind of messy and I had to get another copy. I treat my newer copy much better--ohlala. Anyway, the desserts alone are worth the purchase of this book. My French fiance swears *my* (thank you Ms. Clements and Wolf-Cohen) creme caramel is the best he's ever had. He was also on cloud nine when I made the floating islands. The clafoutis recipe is also one of his favorite desserts. Honestly, if you've ever been intimidated about French cooking, you HAVE to go out and make the purchase of this book. The recipes you make will look exactly like the beautiful photos that accompany each of the dishes. This book is a keeper!!
