Bisque is a French creamy, highly seasoned soup made from straining a broth of crustaceans, typically crab, shrimp, lobster, langoustine or crawfish. It's a popular seafood soup, made by lightly sautéing the crustaceans, simmering in wine and aromatic ingredients, straining and adding cream.
